4 pitta breads
150g mature Cheddar cheese

Warm 4 pitta breads under a medium grill for 1 minute on each side (just to make the pitta breads easier to open – take care not to toast them). Cut a slit along one edge of each and make a pocket. Spread each inside with 1 heaped tbsp sweet chutney, such as onion and tomato. Grate 150g mature Cheddar cheese and divide among the pitta breads, tucking it inside the pocket. Toast under a hot grill, turning once, until the cheese is hot and bubbling.
