About this recipe: Keep a can of versatile baked beans in the cupboard for this pleasantly filling, spicy dish.

Serves: 4 

  • 1 chopped onion
  • 1 tbsp oil
  • 1 tbsp mild curry powder or paste
  • 350g mixed cooked vegetables
  • 420g can baked beans
  • 1 tbsp sultanas
  • 8 large or 12 small chapattis
  • Greek-style yoghurt and/or mango chutney

  1. Lightly fry 1 chopped onion in 1 tbsp oil in a pan for 4-5 minutes or until softened. Stir in 1 tbsp mild curry powder or paste and cook for 1 minute. Add 350g mixed cooked vegetables, chopped into small pieces (either leftovers or use frozen mixed vegetables, cooked for 3 minutes). Add a 420g can baked beans and 1 tbsp sultanas. Warm through gently. Warm 8 large or 12 small chapattis in the microwave according to the pack instructions. Serve the curry immediately with the chapattis, Greek-style yoghurt and/or mango chutney.
