Lightly fry 1 chopped onion in 1 tbsp oil in a pan for 4-5 minutes or until softened. Stir in 1 tbsp mild curry powder or paste and cook for 1 minute. Add 350g mixed cooked vegetables, chopped into small pieces (either leftovers or use frozen mixed vegetables, cooked for 3 minutes). Add a 420g can baked beans and 1 tbsp sultanas. Warm through gently. Warm 8 large or 12 small chapattis in the microwave according to the pack instructions. Serve the curry immediately with the chapattis, Greek-style yoghurt and/or mango chutney.
