About this recipe: Pasta and noodle dishes are all-time favourites, and a filling and nourishing meal can be put together in the time it takes for the pasta to cook – ideal for meals in a hurry. Try this Asian stir-fry full of nutritious vegetables and nuts.

Serves: 4 

  • 2 tbsp sunflower oil
  • 2 chopped garlic cloves
  • 1 large onion
  • 2 tsp grated
  • fresh root ginger
  • 500g stir-fry vegetables
  • 2 tbsp soy sauce
  • 1/2 tsp five-spice powder
  • 300g straight-to-wok Chinese noodles
  • 125g roasted peanuts or cashew nuts

  1. Heat a wok or frying pan with 2 tbsp sunflower oil. Add 2 chopped garlic cloves, 1 large onion, finely sliced and 2 tsp grated fresh root ginger. Stir-fry for 2 minutes. Stir in 500g vegetables and stir-fry for 5 minutes. Season the vegetables with 2 tbsp soy sauce and 1/2 tsp five-spice powder, then stir in 300g straight-to-wok Chinese noodles and cook for 2 minutes or according to the pack instructions. When thoroughly heated through, top with 125g roasted peanuts or cashew nuts.
