Cook 350g spaghetti in a pan of salted boiling water for 10 minutes, or according to the pack instructions, until tender with a bite at the centre. Drain, then toss with 8 large ripe tomatoes, roughly chopped, 2 crushed garlic cloves, 2 tbsp chopped flat-leaf parsley and 2 tbsp olive oil. Season to taste with ground black pepper and crushed chilli flakes, then serve with grated Parmesan cheese, grana padano or Italian-style hard cheese.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
