    1. Cook 350g spaghetti in a pan of salted boiling water for 10 minutes, or according to the pack instructions, until tender with a bite at the centre. Drain, then toss with 8 large ripe tomatoes, roughly chopped, 2 crushed garlic cloves, 2 tbsp chopped flat-leaf parsley and 2 tbsp olive oil. Season to taste with ground black pepper and crushed chilli flakes, then serve with grated Parmesan cheese, grana padano or Italian-style hard cheese.

    Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

    …get ahead

Keep these pasta basics in your storecupboard and fridge for quick and tasty meals in moments: dried pasta, extra virgin olive oil, garlic and a hunk of Parmesan cheese, grana padano or vegetarian Italian-style hard cheese
