    About this recipe: Traditional English fool is easy to make with a can of custard and a jar of gooseberries. Feel free to make your own low-fat custard as well.

    Ingredients
    Serves: 4 

    • 350g jar gooseberries
    • 425g can low-fat custard
    • 1 tbsp extra-thick double cream, fromage frais or Greek-style yoghurt
    • toasted flaked almonds

    Method

    1. Drain a 350g jar gooseberries. Blend the fruit to a smooth purée.
    2. Turn a 425g can low-fat custard into a bowl and stir in the gooseberry purée.
    3. Divide among four small ramekins or glasses and chill in the freezer for 5-15 minutes. Serve plain or top each dessert with 1 tbsp extra-thick double cream, fromage frais or Greek-style yoghurt and sprinkle with a few toasted flaked almonds, if you like.
