Ingredients
Serves: 4
20g unsalted butter
100g walnut pieces
2 tbsp rum or brandy
6 tbsp maple syrup
150ml double cream

Melt 20g unsalted butter in a small pan and add 100g walnut pieces. Stir over a high heat for a few seconds, then reduce the heat and stir in 2 tbsp rum or brandy and 6 tbsp maple syrup.
Bring to the boil, stirring, and bubble for about 2 minutes or until the syrup is reduced slightly.
Stir in 150ml double cream and remove from the heat. Pour over ice cream – vanilla, chocolate or coffee – and serve immediately.
