Spring onion and smoked cheese topping

    Add this cheesy garlic topping to baked potatoes and they become a delicious, filling and nutritious meal.

    Serves: 4 

    • bunch of spring onions
    • garlic clove
    • 25g unsalted butter
    • 150g smoked gouda cheese

    1. Thickly slice a prepared bunch of spring onions on the diagonal. Cut an unpeeled garlic clove in half. Heat 25g unsalted butter in a small frying pan and gently cook the spring onions and unpeeled garlic for 3-4 minutes or until the onions are tender. Discard the garlic and season the onions.
    2. Split open the baked potatoes and spoon in half the spring onions and all the garlicky butter from the pan. Roughly chop 150g smoked gouda into small cubes and scatter over the baked potatoes. Sprinkle the remainder of the spring onions on top. Serve with watercress.

    *To oven-bake potatoes, preheat the oven to 220°C (200°C fan oven), gas 7. For four people, scrub 8 x 180g potatoes with a brush and prick all over with a fork. Push a metal skewer through each potato (this conducts heat to the middle of the potato so that it cooks faster). Bake for 50 minutes-1 hour; the skewers will come out easily when the potatoes are cooked. Cut a deep cross in the top of each potato and squeeze it open, holding it with a clean tea towel.
    *For speed, you can ‘bake’ potatoes in a microwave. Prick the skin in several places with a sharp knife (this stops them exploding). For a 180g potato, microwave on High for 3 1/2 minutes. Turn and microwave for a further 1-2 minutes or until tender. Leave to ‘rest’ for a couple of minutes before serving. Cooking more than one potato at a time will take longer: four will take about 8 minutes.
