About this recipe: Keep your storecupboard stocked with cans of sweetcorn and new potatoes to whip up this comforting soup at a moment's notice. Parma ham or grilled bacon give it an excellent smoky flavour.

Serves: 4 

  • 1 chopped onion
  • 2 tbsp olive oil
  • 418g can creamed sweetcorn
  • 300g can new potatoes
  • 300ml chicken stock
  • 150ml semi-skimmed milk
  • 85g diced Parma ham or grilled bacon
  • soured cream
  • smoked paprika

  1. Fry 1 chopped onion in 2 tbsp olive oil in a large pan for about 5 minutes to soften. Add a 418g can creamed sweetcorn, 300g can new potatoes, drained and diced, 300ml chicken stock, made with stock cubes, and 150ml semi-skimmed milk. Season. Cover and simmer for 5 minutes, then add 85g diced Parma ham or grilled bacon. Ladle into bowls, add a dollop of soured cream to each and sprinkle with smoked paprika to serve.

…cooking tip

If you only have ordinary sweetcorn, you can just put it into a blender and whiz for 2 minutes.
