About this recipe: This is a fun and easy family meal as people can assemble their own burritos with their favourite ingredients.

Serves: 4 

  • 1 tbsp sunflower oil
  • 1 chopped onion
  • 1 crushed garlic clove
  • 1 green chilli
  • 1 chopped red pepper
  • 420g can baked beans
  • 1/2 tsp dried oregano
  • 8 soft flour tortilla wraps
  • 1 shredded cos lettuce
  • 125g grated Cheddar cheese
  • 150g plain yoghurt
  • ready-made tomato salsa

  1. Heat 1 tbsp sunflower oil in a pan. Add 1 chopped onion, 1 crushed garlic clove, 1 green chilli, seeded and finely chopped, and 1 chopped red pepper. Fry for 4-5 minutes or until softened. Stir in a 420g can baked beans, sprinkle with 1/2 tsp dried oregano and warm through. Crush the mixture lightly with a fork or potato masher.
  2. Heat 8 soft flour tortilla wraps, one at a time, in a frying pan for about 30 seconds on each side, or in the microwave according to the pack instructions.
  3. Put bowls containing 1 shredded cos lettuce, 125g grated Cheddar cheese, 150g plain yoghurt and a ready-made tomato salsa on the table with the tortillas and the warm bean mixture.
  4. To serve, each diner spoons the beans into the middle of a tortilla and tops with the filling ingredients. Roll up the tortilla and eat immediately.
