Heat 1 tbsp sunflower oil in a pan. Add 1 chopped onion, 1 crushed garlic clove, 1 green chilli, seeded and finely chopped, and 1 chopped red pepper. Fry for 4-5 minutes or until softened. Stir in a 420g can baked beans, sprinkle with 1/2 tsp dried oregano and warm through. Crush the mixture lightly with a fork or potato masher.

Heat 8 soft flour tortilla wraps, one at a time, in a frying pan for about 30 seconds on each side, or in the microwave according to the pack instructions.

Put bowls containing 1 shredded cos lettuce, 125g grated Cheddar cheese, 150g plain yoghurt and a ready-made tomato salsa on the table with the tortillas and the warm bean mixture.

To serve, each diner spoons the beans into the middle of a tortilla and tops with the filling ingredients. Roll up the tortilla and eat immediately.
Very nice. Great way to use baked beans. I didn't have a pepper so used a courgette and some mushrooms instead. Also added a tsp of ginger! Delicious, Thanks!
