This refreshing pasta salad with trout is perfect on a hot summer day with its light vinaigrette dressing.

250g dried pasta
3 tbsp olive oil
1 small lemon
3 tbsp chopped watercress or fresh flat-leaf parsley
225g pack ready-cooked trout fillets
1/2 small cucumber
1 tbsp drained capers

Cook 250g dried pasta, such as farfalle, in a pan of salted boiling water for 8 minutes, or according to the pack instructions, until tender with a bite at the centre.
Drain, put into a large bowl and toss while hot in a green vinaigrette made with 3 tbsp olive oil, the grated zest and juice of 1 small lemon and 3 tbsp chopped watercress or fresh flat-leaf parsley. Season, then set aside.
Flake the flesh from a 225g pack ready-cooked trout fillets and dice 1/2 small cucumber. Toss with the dressed pasta and 1 tbsp drained capers.
