About this recipe: This tropical fruit salad is easy to put together with canned pineapples and lychees.

Serves: 4 

  • 410g can pineapple pieces
  • 4 kiwi fruit
  • 425g can lychees
  • 1 lime

  1. Divide a 410g can pineapple pieces in natural juice or syrup among four bowls. Peel and slice 4 kiwi fruit and arrange on the pineapple, then add a 425g can lychees, with their syrup. Coarsely grate or zest 1 lime over the salads, then squeeze over the juice before serving.

…use it up

Make a breakfast smoothie with leftover fruit. For one person, whiz 250ml fruit salad in a blender with 200ml plain low-fat yoghurt. Dilute as required with up to 125ml unsweetened fruit juice.
