    About this recipe: This is a treat for breakfast that the entire family will enjoy. If you want it a touch healthier, simply omit the sugar and butter.

    Ingredients
    Serves: 4 

    • 4 tablespoons peanut butter
    • 2 muffins, split and toasted
    • 1 apple, cored and sliced
    • 4 tablespoons dark brown soft sugar
    • knob butter
    • 1 teaspoon ground cinnamon

    Method

    1. Spread 1 tablespoon of peanut butter onto each muffin half. Top each one with a few apple slices. In the microwave, melt together the brown sugar, butter and cinnamon, stirring frequently until smooth. Drizzle the cinnamon mixture over apple slices.

    Used different ingredients. Instead of using apples (as I didn't have any) I used banana slices and omitted the cinnamon. - 08 Mar 2009

    This recipe was very quick/easy, and quite tasty to boot! My younger sister loved it. I used whole wheat muffins and unsweetened, natural peanut butter (it might've been a tad too sweet otherwise). - 08 Mar 2009
