Spread 1 tablespoon of peanut butter onto each muffin half. Top each one with a few apple slices. In the microwave, melt together the brown sugar, butter and cinnamon, stirring frequently until smooth. Drizzle the cinnamon mixture over apple slices.
This recipe was very quick/easy, and quite tasty to boot! My younger sister loved it. I used whole wheat muffins and unsweetened, natural peanut butter (it might've been a tad too sweet otherwise). - 08 Mar 2009
