Liver sausage spread

    If you love liver sausage (Braunschweiger) you'll love this recipe. My mother used to make this for every family get together and it was always a hit. It is best served with rye bread.

    Serves: 24 

    • 450g (1 lb) liver sausage (from a Polish deli)
    • 2 tablespoons dill pickled cucumber juice
    • 75g (3 oz) finely chopped dill pickled cucumbers
    • 50g (2 oz) finely chopped onion
    • 2 tablespoons mayonnaise (optional)
    • 1 teaspoon Worcestershire sauce
    • 200g soft cream cheese
    • 1/4 teaspoon garlic salt

    1. Cut the liver sausage and cream cheese into small chunks and place in large mixing bowl (this helps them to blend more easily).
    2. Add remaining ingredients together in a mixing bowl and beat until well-blended. It should be of a spreadable consistency when finished. (The mayonnaise will make the spread a little creamier, but isn't necessary.)
    3. Chill leftovers in an airtight container for up to 2 weeks.
