Hannah's cous cous salad

    This simple salad is a favourite of my daughters & whenever made will simply disappear from the fridge before I get to serve it! Quick & easy to prepare & useful to use up odds and ends of salad ingredients.

    Serves: 8 

    • 180g dried couscous
    • 1 teaspoon vegetable stock granules
    • Boiling water
    • 2 tomatoes, finely chopped
    • 2 inches of cucmber, finely chopped
    • 4 spring onions, chopped
    • 1/2 can sweetcorn, drained
    • 2 tablespoon fresh mint, chopped
    • 1 tablespoon lemon balm, chopped
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • Salt & pepper to taste

    1. Prepare the couscous, by placing the dried couscous and vegetable stock in a large bowl & covering with boiling water so that all couscous is covered & there's about 1/2 cm extra water. Cover with a clean dry tea towel & allow the steam to cook the couscous. After 10 minutes fork through to loosen the grains.
    2. When the couscous is cool, add all you other ingredients & mix well. Place in fridge to coll for 30 minutes until all the herbs & mint flavour have been absorbed by the couscous. Serve.

    Used different ingredients. I omitted the cucumber and tomato and added sultanas and toasted peacans instead. Next time I'll try with the cucumber and tomato, but also will add feta  -  06 Jan 2009


    Used different ingredients. As the description says, I used up everything I had in my fridge. I added red onion instead of spring onions and olives. Delicious!  -  01 Sep 2008


    I'm a beginner when it comes to cooking but this was so easy. I didn't use any lemon balm, salt or pepper and it tastes just great!  -  17 Sep 2009
