Seafood Medley Rice

    I buy seafood medley packs from Sainsbury's and then, I just take whatever food is available in the house and combine it all. It's even better if you can get fresh prawns, squid and mussels but if not, use the seafood medley packs.

    Serves: 4 

    • Seafood Medley (or fresh Prawn, fresh Squid and fresh Mussels)
    • 1 tbsp of olive oil
    • 1 tbsp of butter
    • 1 tsp of lemon juice
    • Worcestershire sauce or soy sauce, to taste
    • fresh rosemary (about 2 sprigs)
    • 1 small carrot, peeled, sliced and blanched
    • half a head of cauliflower, blanced
    • 50g petit pois
    • 1 green, red or yellow pepper, sliced
    • 200g basmati rice, washed and then cook with 300ml of water
    • 1 onion, chopped
    • 3 cloves garlic, crushed or minced
    • pepper

    Prep:30min  ›  Cook:30min  ›  Ready in:1hr 

    1. In a frying pan, add olive oil and melt butter. Add garlic, onion and rosemary until you can smell the aroma but don't burn it.
    2. Add cauliflower, carrots, pepper, petit pois and the seafood.
    3. Cook for at least a minute then add lemon juice.
    4. Add rice and mix.
    5. Add another knob of butter and mix until butter completely melts.
    6. Add worcestershire sauce or soy sauce, amount depending on your taste then add pepper.
