Mary's Chicken

    Special when you want to have full flavour of juicy chicken. I was running out of time and had few ingredients to cook with, so I came out with this. Enjoy!

    Serves: 2 

    • 4 chicken thighs
    • 1 teaspoon of strong mustard
    • 2 tablespoons of ketchup
    • 2 sweet oranges
    • 2 chicken stock cubes
    • 2 tablespoons of light soy sauce
    • 2 teaspoons of garlic flakes
    • 1/2 teaspoon of ground pepper
    • 4 slices of back bacon
    • butter to cook

    1. Remove the skin from the chicken thighs and make some diagonal lines in the chicken to make it absorb all the marinade easier and faster.
    2. Mix all the ingredients with the juice of the oranges and let it marinate for about 20-30 minutes. When the chicken takes the colour of the gravy, wrap it with a strip of bacon.
    3. Fry in butter in medium heat in a pan and cover it, rotate it each 5 minutes for 20 minutes or until the chicken is cooked and juicy.
