Light and quick sweet corn, spring onion & garlic salad

    This is a great salad with a steak dish or just as a quick lunch or light snack, I served it to a friend the other day with a homemade crispy baguette and a Roasted Root Vegetable Soup (see my recipe on this website). Feel free to tweak this recipe to your own tastes, I use more sweetcorn and less onions if making it for my girlfriend.

    Serves: 2 

    • 1 small tin of salad crisp sweetcorn, drained.
    • 2 little gem's or 1 large cos lettuce washed and broken (not cut) into individual leaves
    • 2-5 garlic cloves, or to taste ( 2 teaspoons ready prepped garlic)
    • 1/2 mug of mayonnaise
    • 4 tablespoons cold water
    • 4 spring onions, chopped
    • cracked black pepper to taste
    • small bunch of fresh chives, finely chopped.

    1. Add the garlic, water and half the chives to the mayonnaise, Mix until free from lumps, you want it to be runny so add more water if needed.
    2. Put 3 or 4 lettuce leaves onto a plate. Sprinkle some spring onion and sweetcorn on top, then pour a few tsp's of the garlic dressing over all this.
    3. Repeat this process until you have used half the ingredients and have made a nicely shaped salad. Then use the other half for the second portion. I like to pour a lot of the dressing over the top and finish with loads of black pepper from a mill.
