    About this recipe: A simple sauce that works just as well with TVP instead of mince. Add to spaghetti or as your meaty base in lasagne.

    Ingredients
    Serves: 4 

    • 500g pack mince beef or TVP
    • 3 tbsp of tomato puree
    • 2 large white onions
    • 4 garlic cloves
    • 2 tbsp olive oil
    • 2 tins of chopped tomatoes
    • salt and pepper to taste

    Method

    1. Prepare all the onions and garlic first: chop onions and finely chop garlic.
    2. Heat a large saucepan. Add the olive oil and then the onions and garlic. Sweat them off slowly on a medium low heat for 5-10 min.
    3. Add the mince beef or soaked TVP to the onions and garlic. Turn up the heat to medium high and cook untill browned, draining off some of the excess moisture.
    4. Once the beef or TVP is browned and the moisture is drained, add the tomato puree and stir it in. Next add the tins of chopped tomatoes and simmer for 10- 15 minutes minutes. Season with salt and pepper to taste.

    Tips

    The great thing about tomato based sauces is that if it lacks punch, simply add another spoon of tomato puree to kick the flavour up a dial. This is especially true if you use the cheaper economy branded tinned tomatoes - just add a bit more puree to taste. Also, try to avoid crushing the garlic in a press. Finely chopping it for some reason ensures a stronger (don't worry - not overpowering) garlic flavour!

    Was looking for a home made bolognese recipe to try as I've been finding jarred versions quite sickly. Adapted this tonight for my partner and I and thoroughly enjoyed it. Will use this again next week when I cook for father's day - 08 Jun 2014
