First dice the onion into medium chunks. Shred the cabbage finely and cut the carrot and celery into normal slices.
In a large soup pot, pour the 1000ml of water and boil. When boiled, add the stock cubes, chopped tomatoes, pepper and herbs. Stir well. Turn to a medium heat and add all the vegetables and crushed garlic and simmer for 25-30 mins, till the vegetables have softened. Serve warm.
