    About this recipe: A healthy, low fat diet soup that's very tasty as well. If you like your soup with more liquid than veg, add more stock.

    Ingredients
    Serves: 4 

    • 1/2 large white cabbage
    • 3 carrots
    • 2 large onions
    • 3 sticks of celery
    • 1 tin of chopped tomatoes
    • 1000ml of stock (use 1 1/2 veg stock cubes)
    • 5-6 cloves of crushed garlic
    • 1 1/2 tbsp of dried mixed herbs
    • 1/2 tsp pepper

    Method

    1. First dice the onion into medium chunks. Shred the cabbage finely and cut the carrot and celery into normal slices.
    2. In a large soup pot, pour the 1000ml of water and boil. When boiled, add the stock cubes, chopped tomatoes, pepper and herbs. Stir well. Turn to a medium heat and add all the vegetables and crushed garlic and simmer for 25-30 mins, till the vegetables have softened. Serve warm.
