1 teaspoon each of chilli powder, turmeric, coriander, cumin, salt and pepper
5 small dried chillis
1 small mug of malt vinegar
3 tablespoons of cooking oil
about 5 lbs (2.25kg) of chicken wings

Peel & coarsely chop the first 3 items,
Chuck everything (except wings) into a food processor. Whiz it all up to a medium to fine mush.
Cut the pointed bits off the wings & dispose of them. Then put wings into a large mixing bowl.
Tip all the mix over the wings. Then get your hands into the bowl & mix thouroughly. Wash your hands well straight away.
Cover the bowl & put in fridge for a couple of hours
Take roasting tray & lay the wings together on the bottom. Do not pile them up (you may need 2 trays)!
Roast at 200 degrees C (gas mark 6) for 30 mins, then use a flat metal tool to toss them about. Put back in oven for another 20 mins by which time they will be brown & crispy on the outside, but succulent & juicy inside.
