Easy Vindaloo wings

    Chicken wings in a hot marinade roasted in oven.

    Serves: 4 

    • 1 large onion
    • 1 whole bulb of garlic
    • 1 finger of ginger
    • 5 cloves
    • 5 cardomon pods
    • 1 teaspoon each of chilli powder, turmeric, coriander, cumin, salt and pepper
    • 5 small dried chillis
    • 1 small mug of malt vinegar
    • 3 tablespoons of cooking oil
    • about 5 lbs (2.25kg) of chicken wings

    1. Peel & coarsely chop the first 3 items,
    2. Chuck everything (except wings) into a food processor. Whiz it all up to a medium to fine mush.
    3. Cut the pointed bits off the wings & dispose of them. Then put wings into a large mixing bowl.
    4. Tip all the mix over the wings. Then get your hands into the bowl & mix thouroughly. Wash your hands well straight away.
    5. Cover the bowl & put in fridge for a couple of hours
    6. Take roasting tray & lay the wings together on the bottom. Do not pile them up (you may need 2 trays)!
    7. Roast at 200 degrees C (gas mark 6) for 30 mins, then use a flat metal tool to toss them about. Put back in oven for another 20 mins by which time they will be brown & crispy on the outside, but succulent & juicy inside.
