About this recipe: My mum and Dad always spoke about this 'Maltese Ftira' as a very good traditional sort of pizza. In the old days they use to eat this for special occasions...and they use to take it to the bakery to cook it.
I've not made this yet but this is Gozitan rather than strictly Maltese. Maltese Ftira is a round loaf of sourdough crusty bread shaped like a bagel only larger. The people of Gozo call this pizza type recipe ftira so it ought to be called Gozitan ftira. And the bread loves a stone oven so if you can bake it on floured stone you should get a more authentic taste - 05 Feb 2015
