Maltese Ftira

    My mum and Dad always spoke about this 'Maltese Ftira' as a very good traditional sort of pizza. In the old days they use to eat this for special occasions...and they use to take it to the bakery to cook it.

    • 500g bread dough
    • 8 anchovies
    • 2 tbsp capers
    • 3 tomatoes cut in cubes
    • 12 green olives cut in circles
    • oil
    • fresh mint finely cut
    • pepper

    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Heat oven to 230 degrees C (gas mark 8). Spread the dough into a 30cm x 15cm rectengular base with loads of oil. Put all ingredients on top and put in heated oven for around 40 min.

    I've not made this yet but this is Gozitan rather than strictly Maltese. Maltese Ftira is a round loaf of sourdough crusty bread shaped like a bagel only larger. The people of Gozo call this pizza type recipe ftira so it ought to be called Gozitan ftira. And the bread loves a stone oven so if you can bake it on floured stone you should get a more authentic taste  -  05 Feb 2015
