Fried Salmon Fillets with Orange & Tomato Salsa

    This was a succesful experiment by myself. It turned out quite well, and tastes nice too - I hope you will try it. This recipe will serve 2 - 4 people depending on the amonut of salmon you want to give each person.

    Serves: 2 

    • 2 or 4 salmon fillets
    • Salt
    • Pepper
    • 3 teaspoons of olive oil
    • 2 oranges
    • 2 tomatoes
    • 1 teaspoon of fresh parsley

    1. Get one of your oranges and take the peel off and then dice it into small squares.
    2. Now do the same with the tomatoes.
    3. Place in a bowl and add 2 teaspoons of olive oil, parsley and season with salt and pepper. Then mix well together.
    4. Slice the other orange in half, then squeeze all the juices out into a bowl and put aside.
    5. Then prepare the salmon. Season it with salt and pepper. Heat 1 teaspoon of olive oil in a frying pan at med-heat. Place your salmon fillets onto the frying pan, and cook on each side for 3 minutes.
    6. After the salmon has been cooked on each side for 3 minutes, pour the orange juice you put aside over the salmon, then cook for another 5 minutes on whatever side you think needs it but make sure it is cooked!
    7. Congratulations you have just made, Salmon with Tomato and orange salsa!
    8. Serve with potatoes if desired and any remaining parsley.
