About this recipe: Published so my brother will stop bugging me! You can play around with the quantities to suit.

Ingredients

Serves: 2 

  • 1 pint milk
  • 2 oz / 60g butter
  • 2 oz / 60g plain flour
  • tip tsp mustard
  • seasoning
  • 2 - 3 oz / 60 - 90g any cheese - grated or crumbled
  • Macaroni
  • Tinned tomatoes (optional)

Method

Prep:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Cook macaroni pasta then put aside.
  2. Add everything except the cheese, tomatoes and pasta in a saucepan.
  3. Simmer for 10 - 12 minutes whisking occasionally.
  4. Stir till thickened.
  5. Stir in the cheese, tomatoes (if required) and simmer.
  6. Then add the pasta to warm sauce.
  7. Season to taste.
  8. If too thick, thin down with a little more milk. For a thinner sauce add less milk
