Walnut Brownies

    These are dense, chewy chocolate brownies with a nutty addition - delicious with a cup of coffee on a lazy weekend.

    Serves: 12 

    • 50g butter
    • 5 tablespoons cocoa powder
    • 200g caster sugar
    • pinch salt
    • 90g plain flour
    • 2 tsp vanilla extract
    • 2 egg whites, lightly whipped
    • 115g chopped walnuts

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C / Gas mark 4. Grease an 20cm square cake tin.
    2. Melt the butter over low heat. Pour into large mixing bowl and stir in cocoa powder, sugar, salt, flour and vanilla. Mix in egg whites and walnuts. Spread the mixture evenly into the cake tin.
    3. Bake for 30 minutes. Let cool in tin for 10-15 minutes before cutting.

    The recipe is slightly disappointing as they are quite hard despite cooking for 6 mins less as I was aware they were starting to over cook. The mixture un a 20cm tin is not deep enough you could double the quantities and probably fair better.  -  10 Apr 2014


    the brownies are good but quite hard and chewy, as I'm new to baking, I'm not sure if it is a problem with my method or the recipe!  -  04 Feb 2014


    I'M IN HEAVEN.....the mix tastes sooooo good and brownies are in the oven as I type this. I added coffee powder along with half the amount of chocolate powder (cocoa) as I love the hint of coffee in chocolate cake........cant wait for tea time :-) kitchen smelling nice too - oh and I left out the nuts as the kids wont eat them  -  14 Oct 2013
