About this recipe:Over the past year, my girlfriend and I have made a wide selection of biscuits. We have tried and tested a whole range of recipes, and this combination of ingredients that I adapted and made, is by far the best! Definitely for a sweet tooth, though!
Makes: 24 cookies
375g caster sugar
3 tablespoons light brown sugar
3/4 tablespoon vanilla extract
300g self-raising flour
1 pinch salt
300g chocolate chips
150g white chocolate chips

Preheat the oven to 180 C / Gas 4.
Cream together the butter, caster sugar and brown sugar in a large bowl. Then mix in the 2 eggs and vanilla extract. When mixture is fully mixed together, sieve in the flour and salt gradually. Mix again and place in the fridge for 15 minutes.
Remove and then stir in all of the chocolate chips. Use a dessertspoon to place the dough on the baking trays (you don't need to grease them).
Bake for 10 to 15 minutes (depending on the size). Allow the biscuits to cool on the baking tray for 5 minutes, then transfer to a wire cooling rack for a further 5 minutes.
Used different ingredients.
I have a tendency to replace the chocolate chips with whatever chocolate I have to hand - M&Ms are PERFECT for this recipe, as are crushed Malteasers. I have used crushed oreos in the past as well, although that didn't work quite as well. - 01 Oct 2009
