I know what you think - can't possibly be edible. Believe me - it is beautiful. This is a Polish dish, a soup made of sour cucumbers, or pickles. You can buy a jar of them thinly sliced in Polish shops but if there is none in your area you can just slice pickles.
I usually just make the soup from the vegetables and that's it but you can throw a chicken stock cube in as well to make it more tasty if you want.

1 jar of thinly sliced sour cucumbers

3 medium potatoes

1 parsnip

1 small celeriac

1 carrot

1 medium onion

a handful of red lentils

a bunch of celery

salt

white pepper

black pepper

hot chilli powder

Preparation method
- Place a liter an a half of water in a pot. Chop potatoes, celeriac, parsnip and carrots and throw them in together with the lentils. Slice the celery into pieces and add that too. Add black and white pepper, salt and chilli.
- Cook all that until the potatoes are soft enough to eat and generally all ingredients are cooked through and edible. Only when everything is soft, throw the pickles in. If you got them all sliced in a jar and there is the sour liquid in the jar too, no need to drain it, add that too. If you sliced your pickles yourself, don't add the water from the jar at all.
- Bring to boil and cook for a minute, just to make sure that it's hot through.
- Take it off the stove and add 2 tablespoons of single cream and stir.
