Sweet Potato and Broccoli Soup
About this recipe: A lovely soup, very lurid in colour though!
Ingredients
Serves: 4
- 1 litre of vegetable stock
- 2 sweet potatoes
- 1 onion, chopped
- 1/2 a medium sized broccoli
- 1 fresh chilli, chopped
- 2 tsp garlic puree
- 1 tsp hot chilli powder

- In a large pot, bring stock to the boil.
- Chop the sweet potato into smaller pieces and place in boiling stock.
- Add the onion.
- When the sweet potato is soft, add the rest of the ingredients and leave simmering for five minutes.
- Add the mixture to a food processor or blender and whizz for 10 seconds.
- Soup is ready, serve in a nice bowl with a huge hunk of bread! Yum!

I made this today, it is DELICIOUS. The only problem is that it is way too hot (and I like spicy food). I think next time I'd add only half of the chilli and chilli powder suggested in the recipe. - 07 Apr 2013
