Warm Goat Cheese Sandwiches

About this recipe: Basil pesto, sun-dried tomatoes and goat cheese make a savoury, colourful, easy vegetarian sandwich.


Serves: 4 

  • 150g goat cheese, sliced
  • 6 tablespoons basil pesto
  • 75g sun-dried tomatoes, softened and chopped
  • 2 pitta breads

  1. Preheat the oven to 180 C / Gas mark 4.
  2. Open the pitta breads to form a pocket. Insert slices of goat cheese. Spread a layer of pesto over the goat cheese. Sprinkle with sun-dried tomatoes. Place pitta halves onto a baking tray.
  3. Bake for 3 to 5 minutes in the preheated oven, just until the filling is warm and the bread is lightly toasted.
