Banana & Strawberry Wheaten Bread

    Deliciously moist Irish wheaten bread with hints of banana, strawberry and white chocolate. If you prefer, you can make this into scones rather than a loaf.

    Serves: 6 

    • 400g wholemeal flour
    • 1 tsp baking soda
    • 1 tsp salt
    • 100g butter
    • 180ml buttermilk
    • 100ml vegetable oil
    • 2 tablespoons demerara sugar
    • 10 strawberries, hulled and chopped
    • 2 bananas, mashed
    • white chocolate chips

    1. Grease very well a medium depth loaf tin, or baking tray (to make scones instead)
    2. Preheat oven to 180 degrees celcius.
    3. Mix dry ingredients together in a bowl.
    4. In a separate bowl, mix together the butter and sugar. Add this to the dry mixture and beat well.
    5. Mix in oil and buttermilk, stir through evenly.
    6. Next add the fruit, once this is evenly spread though mixture, add the white chocolate chips.
    7. Cover hands in flour, and lightly flour work surface. Take the dough and knead it softly for a minute or two.
    8. Cook for 40 minutes, reduce to 150 degrees celcius, cook for another 20 to 30 minutes.
    9. Leave to cool in pan for 10 minutes before turning out and leaving to cool further on a wire rack.
    10. Delicious toasted with thin spread of flora or jam.

    I thought I would allow myself indulge in this different wheaten bread recipe after assembling your grill chicken salad!this bread is spongey and almost like cake- love it and it is definitly one for the niece  -  28 Sep 2008
