Chicken breasts wrapped in Parma ham

    In this easy chicken breast recipe, chicken is smothered in a herbed butter, then topped with mozzarella and wrapped in Parma ham. The chicken is baked and the ham gets nice and crispy. Delicious!

    Serves: 4 

    • 2 teaspoons dried basil
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 4 cloves garlic, chopped
    • handful of chopped fresh thyme
    • 4 tablespoons butter or margarine
    • 4 boneless, skinless chicken breast fillets
    • 175g grated mozzarella cheese (opitional)
    • 12 slices of Parma ham

    1. In a mixing bowl combine the basil, salt, pepper, garlic, thyme and butter.
    2. Spread butter mix on the chicken. Lay three slices of ham overlapping on a work surface. Place chicken breast on top and sprinkle with grated cheese. Wrap the ham over the top of the chicken. Secure with a wooden skewer if necessary. Repeat for the remaining three chicken breasts.
    3. Bake in oven at 180 C / Gas 4 for 40 minutes.

    I added some sliced chorizo with the mozarella and used serrano ham as I couldn't get parma. Excellent recipe!  -  03 Jun 2012
