About this recipe:A butter, honey, mustard and curry powder sauce is drizzled over chicken, then roasted to golden deliciousness! You can, of course, use chicken breasts if you need to speed things up. Serve withe roasted vegetables or brown rice.
1 whole chicken, cut into pieces
100g butter, melted
4 tablespoons prepared mustard
1 teaspoon salt
1 teaspoon curry powder

Place chicken pieces in a shallow roasting tin. If you are using chicken thighs or breasts with skin, place them skin side up. Combine the melted butter, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake in the preheated oven for 1 1/4 hours (1/2 less for chicken breasts), basting every 15 minutes with the cooking juices, until the chicken is nicely browned and cooked through.
Made up as "marinade" to put on chicken breast fillets when still frozen. Added garlic to the mix and slightly more curry powder (personal taste!) - went down very well with family - asked for it to maked more!! - 31 Aug 2013
