Lemon curd squares

    Lemon curd and coconut combine to make a delicious treat.

    Serves: 40 

    • 250g unsalted butter
    • 275g plain flour
    • 200g caster sugar
    • 1/2 teaspoon bicarbonate of soda
    • 300g lemon curd
    • 50g desiccated coconut
    • 75g toasted and chopped almonds

    1. Preheat the oven to 190 C / Gas mark 5.
    2. In a large mixing bowl cream the butter. Add the flour, sugar and bicarbonate of soda. Mix until the mixture forms coarse crumbs
    3. Pat 2/3 of the mixture into the bottom of one 22x33cm (9x13 in) baking tin. Bake in the preheated oven for 10 minutes. Remove and let cool slightly.
    4. Spread the lemon curd over the baked layer. To the remaining 1/3 of crumb mixture add the coconut and the almonds. Sprinkle over the top of the lemon curd.
    5. Lower oven temperature to 180 C / Gas mark 4. Bake bars for 25 minutes or until lightly browned.

    I'm going to try this one, I bet I wouldn't get away with dividing it into 40 portions; It would probably be more like 20 and then I'd probably be pushing it a bit :-)  -  07 Oct 2014
