Cherry almond toffee apples

    Toffee apples with a sprinkling of dried cherries and flaked almonds - a decadent treat for Halloween or Bonfire Night! Using dairy toffees makes this recipe easy.

    Serves: 6 

    • 6 dessert apples
    • 6 wooden sticks
    • 175g chocolate buttons
    • 400g dairy toffees, unwrapped
    • 2 tablespoons water
    • 1/2 teaspoon vanilla extract
    • 200g dried cherries
    • 100g flaked almonds

    1. Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a baking tray covered with lightly greased aluminium foil. Place the chocolate buttons into a microwave-safe bowl. Heat in the microwave at 30 second intervals, stirring between each until chocolate is melted and smooth. Set aside.
    2. Combine toffee and water in a saucepan over low heat. Cook, stirring often, until toffee melts and is smooth. Stir in the vanilla. Dip each apple into the toffee and gently run apples around insides of saucepan to scrape off some of the toffee. Scrape excess toffee from the apple bottoms using the side of the saucepan.
    3. Roll apples in mixture of cherries and almonds. Place on the aluminium foil. Use a spoon to drizzle chocolate over the apples. If the chocolate is too thick, thin by mixing with a little vegetable oil. Chill until ready to serve.

    "craisins" work well here too. Just a little tip for newbies out there... store bought apples usually have a wax coating on them to make them shiny. To prevent your caramel from slipping off make sure you scrub that wax off or better yet... go apple picking with your family at an apple orchard and pick your own apples (so much fun and a great holiday tradition!) These caramel apples are good though and my husband prefers them to those covered with chocolate chips, drizzles or anything else that adds anymore sweetness to the apple.
