Raspberry sorbet

    Refreshing and fruity, this raspberry sorbet recipe is the perfect sorbet for a summers day!!! Enjoy on its own or pair with fresh fruit or meringues. Lovely for a barbecue!

    Serves: 20 

    • 150g caster sugar
    • 50ml water
    • 900g fresh, good-quality raspberries
    • 1 tablespoon lemon juice

    Prep:10min  ›  Cook:5min  ›  Extra time:30min freezing  ›  Ready in:45min 

    1. Pour the sugar and water into a heavy-based pan and place over a low heat untill sugar dissolves. Bring to the boil, then remove from heat and cool.
    2. When the sugar syrup is cool, add raspberries and lemon juice to the syrup in a food processor and puree.
    3. Strain the pureed mixture through a fine sieve and transfer to an ice cream maker and follow the manufacturer's instructions for sorbet.
