Easy cheesy pasta

    Pasta is one of my favourite foods, however I never eat it plain! This pasta returns the plates back to the kitchen so clean! You can always add chicken to this dish if you prefer.

    Serves: 2 

    • 160g wholewheat penne pasta
    • 80g carrot, chopped
    • 1 tablespoon organic milk
    • 20g grated Edam or Cheddar
    • 1 dessertspoon ground paprika
    • 50g smoked salmon (optional)

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Cook pasta in boling water.
    2. Steam the carrots until soft.
    3. Drain pasta and place back in pan along with the milk and chesse and place on a very low heat, just so pasta can absorb some of the milk and allow cheese to melt; stir for 2 minutes.
    4. Add the carrots and paprika and smoked salmon if using. Add more milk if desired to reach your desired consistency.
    5. Keep stirring until the salmon has gone a dark pink. Enjoy!

    This was really easy to make but needed a lot more milk than recipe said. Family liked it but I felt it was missing something.  -  23 Feb 2013


    Used different ingredients. Instead of using carrots and salmon i used peas and when it was ready to serve, I added some extra cheese on the top.  -  18 Apr 2011
