    About this recipe: This light and gorgeous icing is perfect for a lighter cake, when you don't want all the richness of a butter-based icing.

    Ingredients
    Serves: 12 

    • 2 egg whites
    • 175g caster sugar
    • 5 tablespoons golden syrup
    • 2 tablespoons water
    • 1/4 teaspoon cream of tartar
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract

    Method

    1. Combine the egg whites, sugar, golden syrup, water, cream of tartar and salt in the top of a double boiler over water that is at a hard boil. Start beating right away with a beater until the mixture stands in stiff peaks. Remove from heat and add vanilla or your favourite flavouring and keep beating until it is thick enough to spread easily.

    great recipe, easy, the longer you beat it the stiffer it gets. Very sweet, I was thinking you could probably add lemon juice so it would not be quite so sweet. - 29 Mar 2013
