    About this recipe: My favourite for a cold rainy day!

    Serves: 4 

    • 8 sausages
    • 2 large parsnips
    • 2 large carrots
    • 1 onion
    • 8 mushrooms
    • 2 cloves of garlic
    • powdered ginger
    • 1 packet of meat soup (eg savoury mince/oxtail)

    1. Preheat the oven to 160 degrees C /Gas Mark 3.
    2. Peel and chop the carrots and parsnips. Dice the dice onion, garlic and mushrooms. Place the sausages in an oven proof dish, and add all the chopped vegetables.
    3. Sprinkle with ginger. Mix packet of soup with one pint of warm water and a little more ginger. Pour over the sausages and veg. Cook in the oven for one hour, turning sausages once!
