Farfalle with sausage and cabbage

    This simple yet hearty pasta dish is a great winter warmer. Use green or savoy cabbage, or even cavolo nero if desired.

    Serves: 6 

    • 1 (500g) packet farfalle pasta
    • 75g butter
    • 2 cloves garlic, minced
    • 500g sausage, sliced
    • 1 large cabbage, shredded
    • salt and freshly ground black pepper to taste
    • 4 tablespoons grated Parmesan cheese

    1. Fill a large pot with lightly salted water and bring to the boil over high heat. Once the water is boiling, stir in the pasta and return to the boil. Cook uncovered, stirring occasionally, until the pasta is al dente, about 12 minutes. Drain well in a colander set in the sink.
    2. Melt the butter in a large pot over medium heat. Add the garlic and the sausage. Cook until sausage is no longer pink, about 5 minutes. Add the cabbage; season with salt and pepper; cook until tender, about 15 minutes. Stir in the pasta; cook until completely heated, about 5 minutes more. Top with Parmesan cheese and serve immediately.

    Tasty, quick and simple. And my kids loved it. You really do have to shred the cabbage - I tried cutting it quite fine but it was too big. Making it again tonight and will be shredding.  -  11 Jan 2010


    Made it vegetarian. Used veggie sausages to make half of it - the other half used pork sausages.  -  16 Nov 2009


    The recipe seemed to work well. I made it in two halves - half with pork sausages and half with veggie. Both seemed to work well.  -  16 Nov 2009
