About this recipe:These are a cross between pancakes and Welsh cakes. Wonderful for a special breakfast with the family at the weekend. Serve with jam, apple sauce or honey. Best of all, they're quick to make and low in fat!
2 eggs, beaten
250g apple sauce or purée
1 teaspoon ground cinnamon
2 teaspoons caster sugar
75g wholemeal flour
2 teaspoons baking powder
2 teaspoons vanilla extract

In a large mixing bowl, combine eggs, apple sauce, cinnamon, sugar, flour, baking powder, vanilla and sultanas. Form small cakes out of the batter.
Heat a nonstick frying pan over medium heat, fry the cakes until both sides are browned, about 5 to 7 minutes.
