About this recipe: These are a cross between pancakes and Welsh cakes. Wonderful for a special breakfast with the family at the weekend. Serve with jam, apple sauce or honey. Best of all, they're quick to make and low in fat!

Serves: 6 

  • 2 eggs, beaten
  • 250g apple sauce or purée
  • 1 teaspoon ground cinnamon
  • 2 teaspoons caster sugar
  • 125g flour
  • 75g wholemeal flour
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 75g sultanas

Prep:10min  ›  Cook:7min  ›  Ready in:17min 

  1. In a large mixing bowl, combine eggs, apple sauce, cinnamon, sugar, flour, baking powder, vanilla and sultanas. Form small cakes out of the batter.
  2. Heat a nonstick frying pan over medium heat, fry the cakes until both sides are browned, about 5 to 7 minutes.

This is a great recipe. A great way to use up all of the apple sauce and pear sauce that I have stored in jars and the freezer. They are so quick and easy. - 24 Oct 2011
