Chocolate fudge

    My sister made this recently for a Christmas fayre and it sold out in 5 minutes. In all fairness not much made it to the fayre as we ate most of it beforehand. I LOVE this recipe. It's definitely my favourite fudge recipe. It's perfect around Christmas too. Mum makes a big batch every year.

    Serves: 10 

    • 900g granulated sugar
    • 4 tablespoons unsalted butter
    • 1/8 teaspoon salt
    • 1 (397g) tin condensed sweetened milk
    • 2 teaspoons vanilla extract
    • 340g chocolate chips
    • 340g sweet chocolate, chopped
    • 425g mini marshmallows

    1. Grease a square baking tin and set aside.
    2. Combine sugar, butter, salt and condensed milk in a large saucepan over a medium heat. Allow to boil for 6 1/2 minutes, stirring constantly. Place vanilla extract, chocolate chips, sweet chocolate and the marshmallows into a large mixing bowl.
    3. Pour the hot mixture over the ingredients in the mixing bowl and beat until all the chocolate has melted.
    4. Pour into the already prepared baking tin and gently spread with a rubber spatula.
    5. Allow fudge to sit for 3 hours, probably best to put it into the fridge and then cut into squares. The bigger the better.
    6. You can if you want add approximately 220g of chopped pecans with the other ingredients in the mixing bowl before you pour over the chocolate. But personally I prefer it without.

    Just tried this fudge, it did not work. Followed the instructions exactly but it started thickening during the 6 1/2 minutes boiling then turned into a grainy thick mess when I tried to add it to the chocolate. Don't know if it's possible to salavge it  -  06 Jun 2011


    It tells us to use condensed milk in the recipe then it says evaporated milk in the instructions ,there is a big difference between evaporated and condensed which one is correct  -  22 Oct 2012


    Great Recipe. Although a reduction of chocolate would be good! As the amount of chocolate meant anymore than one block could not be eaten for a while. Although on the plus side that is good for losing weight!  -  07 Oct 2009
