If you find the chips too hard, par-boil them for 5 or 10 mins before putting them in the oven, they will be fluffy inside and golden outside & may take a tad less cooking time. You can also spruce them up by putting flavourings in the oil such as garlic, rosemary, chilli flakes or a pinch of smoked paprika or cumin. Also, if you like them crispy like roast potatoes, you can chuff them up a little after par-boiling them (toss them in the pan or colander) or even sprinkle a little polenta on them before going in the oven - 14 Jan 2010
