About this recipe: This is a super-hearty Italian pasta dish. It's made by stuffing cannelloni pasta with minced beef, spinach, cottage cheese, Cheddar, Parmesan and mozzarella.

Serves: 6 

  • 450g minced beef
  • 85g fresh spinach, chopped
  • 4 cloves garlic, finely chopped
  • 375g cottage cheese
  • 250g grated Cheddar cheese, divided
  • 250g grated mozzarella, divided
  • 125g grated Parmesan cheese
  • 2 eggs, lightly beaten
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 1kg bolognese sauce with mushrooms, such as Dolmio's
  • dried oregano to taste (optional)
  • dried basil to taste (optional)
  • 225g cannelloni pasta

  1. Cook beef in a frying pan over medium heat until evenly brown. Add spinach and garlic; cook until spinach is just wilted. Remove from heat and allow to cool slightly.
  2. In a large bowl, combine beef mixture with half of Cheddar, half of mozzarella, cottage cheese, Parmesan, eggs, 1 teaspoon oregano, salt and pepper. Mix well.
  3. Preheat oven to 180 C / Gas 4. Lightly grease a 23cm x 33cm or similar sized baking dish.
  4. Pour enough bolognese sauce to cover the bottom of the prepared dish.
  5. Stuff cannelloni with beef-cheese mixture and transfer to the baking dish. Pour remaining bolognese sauce over cannelloni and sprinkle with remaining Cheddar and mozzarella.
  6. Sprinkle with dried oregano and basil to taste, if desired. Bake uncovered for 45 to 50 minutes.

I made this dish last night for my Husband's family. Everyone loved it and they are all great cooks. It was easy to make and very, very tasty. We had it with a caramilised onoin and cheese bread and a salad bowl. If I can make it you can - it was easy to make and a real winner... - 30 Jul 2012

Yummy. Filling Cannelloni is a bit tricky if you're clumsy like me but the end result is worth it. Make sure you pack each tube carefully so that there are no air gaps inside them otherwise the pasta over cooks. Thanks for the recipe. Will be making this again. - 27 Jan 2014
