Goat Cheese Croque Madame

    This is my delectable version of a croque madame, with goat cheese and Pecorino Romano.

    Ingredients
    Serves: 4 

    • 2 eggs, beaten
    • 150g grated Pecorino Romano cheese
    • 200g goat cheese, softened and sliced
    • 8 slices bread
    • 8 slices tomato

    Method
    Prep:10min  ›  Cook:6min  ›  Ready in:16min 

    1. Place the beaten eggs in a wide, shallow bowl and set aside. Place the grated Pecorino Romano cheese in a wide, shallow dish and set aside.
    2. Lay the goat cheese onto one side of each slice of bread. Sandwich two tomato slices between two pieces of bread, then dip both sides into the beaten egg. Allow the excess to drip off, then press the sandwiches into the grated Pecorino Romano, coating well on each side; set aside. Repeat to make 4 sandwiches.
    3. Heat a large, nonstick frying pan over medium heat. Cook the sandwiches until golden brown and crisp, about 3 minutes per side.

    This recipe is so unbelievable good! My husband and I were in heaven! The recipe didn't specify what kind of bread to use, so we got a fresh baked italian loaf sliced and used that. This sandwich is great just the way it is. Next time we might add some fresh spinach to the sandwich, but it certainly doesn't need it.  -  27 Sep 2008  (Review from Allrecipes US | Canada)

    First there is the 5 star crispy-cheesy grilled romano on the bread. Then there is the creamy-tomatoey stuff inside. THEN there are the hundreds of variations you can do with this recipe. We did some with fresh herbs, some with pesto, one with colby-jack & blue cheese. The one in the picture is as written on sourdough. Yum.
