Place cauliflower florets in a large glass bowl or casserole, and cover with clingfilm. Poke a few holes in the film with a knife. Cook in the microwave for 5 to 7 minutes, or until tender.
In a cup or small bowl, stir together the mayonnaise and Dijon mustard. Spread over the top of the cauliflower. Sprinkle grated cheese over the top. Return to the microwave, and cook just until cheese has melted, about 2 minutes.
Good basic ingredients but I did change the way I cooked this. I am not a fan of microwaved food. Boiled the Cauliflower until Al Dente, then covered with the mustard/cheese/mayo and baked in the oven for 15 minutes. The mustard added a nice twist to normal cauliflower cheese. I would recommend using a good quality dijon mustard as the taste is quite strong. - 04 Apr 2010
