About this recipe: This is a refined apple crumble recipe that really lets the apples shine. The apple crumble topping is crunchy and light, thanks to the baking powder and bicarb.

Serves: 12 

  • 1kg apples - peeled, cored and sliced
  • 150g caster sugar
  • 1 tablespoon plain flour
  • 1 teaspoon ground cinnamon
  • 125ml water
  • Crumble topping
  • 75g porridge oats
  • 125g plain flour
  • 225g dark brown soft sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 125g butter, melted

  1. Preheat the oven to 180 C / Gas mark 4.
  2. Place the sliced apples in a 20x30cm (9x13 in) baking dish. Mix the caster sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  3. For the crumble topping: Combine the oats, 125g flour, brown sugar, baking powder, bicarbonate of soda and melted butter. Crumble evenly over the apple mixture.
  4. Bake the apple crumble in the preheated oven for about 45 minutes.

Altered ingredient amounts. I halfed the apple part, but left the crumble part as is, it fitted perfectly into my casserole dish and had a nice thick crumble - 07 Mar 2009
