About this recipe: This is an easy way to make something exciting for a midweek supper. It's sure to please the entire family.

Serves: 5 

  • 500g lean mince
  • 1 (30g) sachet taco spice mix
  • 1 (400g) tin diced tomatoes
  • 10 corn tortillas
  • 250ml prepared salsa
  • 100g grated Cheddar cheese

  1. Preheat the oven to 180 C / Gas mark 4.
  2. In a large frying pan over medium-high heat, brown the mince, then stir in the taco spice mix and tomatoes. Line a lightly greased 23x33cm (9x13 in) baking dish with half of the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
  3. Bake in the preheated oven for 20 to 30 minutes, or until cheese is melted and bubbly.
