Creamy coleslaw

    This will be your staple coleslaw recipe once you try it - you'll never get shop bought again!

    Serves: 8 

    • 2 tablespoons caster sugar
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 4 tablespoons milk
    • 125ml mayonnaise
    • 4 tablespoons buttermilk
    • 1 1/2 tablespoons cider vinegar
    • 2 1/2 tablespoons lemon juice
    • 600g finely shredded cabbage
    • 50g grated carrots

    1. In a large bowl, whisk together the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice until smooth. Add cabbage and carrots and mix until blended with the dressing. Refrigerate at least 2 hours before serving.

    No buttermilk?

    Use 4 tablespoons of natural yoghurt instead of buttermilk if desired.

    Really yummy coleslaw. I didn't bother adding the buttermilk and this still had a good consistency. I did 4 cups white cabbage, 1/2 cup carrot, 1/4 cup onion.  -  24 Apr 2011


    Along with other reviewers, I will never buy coleslaw again. Very easy to make, and to adapt for different variations. I used white wine vinegar, very low fat mayo and left out the buttermilk, I also added onion. Other variations: chopped apple and walnut, or coarse grain mustard and horseradish for added bite.  -  06 Aug 2011
