About this recipe: I make this each Christmas - the aromas just match the time of year. It's an ingenious use of plum baby food, though you can try substituting pureed plums if you like. This plum Christmas cake recipe will make: 4 small loaves; 2 medium loaves; 1 large loaf; or 1 tube cake.
This makes a great food gift if you use mini loaf or small tube cake tins.
Altered ingredient amounts. can you tell me how long this keeps - 15 Nov 2008
I pureed 4 peeled over-ripe plums in the blender instead of using baby food. Added 3 Tablespoons flour and a pinch more baking soda. I didn't use food coloring. I baked them as 2 9x9 square cakes and it tastes just like applesauce spice cake. Very good. Makes an great dessert. - 21 Aug 2006 (Review from Allrecipes US | Canada)
