About this recipe: Serve this American style cranberry pie whilst warm with a scoop of vanilla ice cream on top.

Serves: 8 

  • 300g caster sugar
  • 5 tablespoons plain flour
  • 1/4 teaspoon salt
  • 125ml water
  • 325g fresh cranberries

  1. Preheat oven to 220 C / Gas mark 7.
  2. In a saucepan, combine sugar, flour, salt and water. Bring to the boil and cook, stirring constantly until thick and smooth. Add cranberries, lemon juice and cinnamon. Cook 5 minutes until mixture is thick and berries pop. Remove from heat and stir in butter.
  3. Roll pastry out to fit a 23cm (9 in) pie dish. Place bottom sheet of pastry in pie dish. Spoon in filling. Roll out top sheet of pastry and cut into strips for lattice. Place lattice strips on top and seal edges.
  4. Bake in the preheated oven for 40 minutes, or until pastry is golden brown.
